RECIPE OF THE MONTH: KOYLA KARAHI

Ingredients

  • Cooking oil (½ cup)
  • Chicken (1.5kg)
  • Salt (1 tsp)
  • Black pepper powder (1 tsp)
  • Chaat Masala (1 tsp)
  • Cumin powder (1 tsp)
  • Coriander powder (2 tsp)
  • Red chili powder (1 tsp)
  • Chicken powder (1 tbsp)
  • Crushed peppers (1 tbsp)
  • Citric acid (¼ tsp)
  • Garlic paste (1 tbsp)
  • Ginger paste (1 tbsp)
  • Green coriander (as required)
  • Green chili (as required)
  • Red Jalapeno peppers (as required)
  • Yogurt (¼ cup)
  • Crushed tomatoes (1 cup)
  • Coal (1)

Direction

Heat the oil in a saucepan, add chicken and cook it on high flame till it changes color then, add salt, black pepper powder, chat masala, cumin powder, coriander powder, red chili powder, chicken powder, crushed pepper, citric acid then mix well on medium-high flame till the chicken is cooked and oil comes on the surface.

Add garlic paste, yogurt, and crushed tomatoes, mix, and then cover it for 8 minutes. Add ginger paste, green coriander, red jalapeno, and green chili, and cook on a low flame for a few minutes. Then heat the coal, place it on foil, add some oil, and cover till the smoke settles.

Serve hot with naan.
