RECIPE OF THE MONTH: PULAO BIRYANI

What to cook? or What dish should be for dinner or lunch?
It might be not wrong if it has to be said, the hardest task for all our wonder women out there.
Just to ease this burden we have decided to bring delicious recipes for all of you. Enjoy!

Pulao Biryani

Ingredients

  • Green cardamom (7-8)
  • Black cardamom (2)
  • Clove (10-12)
  • Cinnamon sticks (2)
  • Black peppercorns (7-8)
  • Nutmeg (½)
  • Cumin seeds (1 Tsp)
  • Fennel seeds (1Tbs)
  • Ginger garlic paste (2Tbs)
  • Onion (1 small)
  • Salt (To taste)
  • Ghee (¼) cup
  • Water (1Litre or as required)
  • Milk (¾) cup
  • Cream ¼ cup
  • Red chili powder (1Tbs or to taste)
  • Cumin powder ½ Tsp
  • Mace powder (½ Tsp)
  • Black pepper powder (1 Tsp)
  • Turmeric powder (½) Tsp
  • Nutmeg powder (½) Tsp
  • Kewra water ½ Tbs
  • Lemon juice (2 tbsp)
  • Rice ( ½ ) Kg – (soaked or boiled)
  • Water (2 Tbs)
  • Yellow food color (½ Tsp)
  • Fried onion
  • Ghee (1Tbs)

 

Direction

On muslin cloth, add green & black cardamom, cloves, cinnamon sticks, black peppercorns, nutmeg, cumin seeds, and fennel seeds tie and make a potli and set aside.

Add mutton, ginger, garlic paste, onion salt, ghee and mix well until color changes. Add water and potli, mix well and bring it to boil, cover and cook on low flame until meat is tender and 1&½ cups stock remains.

Remove potli and discard it.

In a separate pan, add milk and heat it.

Add cream, red chili powder, cumin powder, mace powder, black pepper powder, turmeric powder, and nutmeg powder, mix well and cook for 3-4 minutes. Now add boiled mutton with stock and mix well. Add kewra water and mix well, cover, and cook for 4-5 minutes then cook on high flame until oil separates.

Add lemon juice and mix well.

Add fried onion and boiled rice.

Dissolve yellow food color in kewra water and mix well & drizzle over it.

Add fried onion and ghee, cover, and cook on low flame for 6-8 minutes.

Now enjoy a delicious Pulao Biryani
