East West Spring Rolls

Fresh vegetables, sundried tomatoes and olives are rolled out and mixed with spices and deep fried to crispy rolls. In a hot pan add a dash of olive oil in which you can add the spring onions, green bell peppers and ginger. After a good toss, add balsamic vinegar to deglaze and put in another bowl. Blend the sundried tomatoes with breadcrumbs, Parmesan cheese and salt and pepper to taste. Add some coriander along with the stir -fried spring onions and bell peppers. Spread the spring roll sheet, add the mozzarella and tomato mix. Roll the spring roll into long cylindrical shape. Deep fry till golden brown and serve with a dip of your choice.

Corn Fritters

If using corn on the cob, cut the corn kernels. If using frozen corn then defrost. In a pan, sauté chopped onions, garlic, corn kernels and chilies for 2 minutes. Transfer this into a food processor with maida, besan, baking powder, baking soda, cumin powder and paprika bits to make a stiff dough. Add a little milk if too dry. Shape this mix into small balls and deep fry until crispy brown. Serve with a roasted bell pepper sauce.

Cinnamon Bread

In a large mixing bowl, add salt, brown sugar, margarine and hot water. Let dissolve.

Add cold water and sprinkle dry yeast on top and let bubble for 5 minutes. Add flour and stir together until soft. You may need to add a little more flour until it is soft. Knead the dough for a few minutes. Let rise for approximately 1½ hours. Punch down dough and divide into loaves. Mix cinnamon and sugar together. Roll out dough to the width of your bread pan. Spray with water so cinnamon and sugar mixture stick better. Add ¾ cup of cinnamon/sugar mix to your dough. Roll dough up and drop into greased bread pan. Let rise for 20 minutes. Bake at 350 for 40 minutes.

Chop the cucumber into a few chunks to blend in a food processor with half glass water. Pour through a sieve. Tip the contents of the sieve back into the machine, whizz again until pulpy, then sieve again into the liquid already collected. Add one teaspoon of pulp along with two tablespoons full of lemon juice and sugar and salt to taste. Mix well and chill before serving. Adding mint leaves with ice cubes before serving is a good idea to add a little zest to the drink. Enjoy.
