What you need

  • About 500g boneless chicken, diced into small pieces
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 carrot, thinly sliced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup small pasta of your choice
  • Fresh parsley, chopped, for garnish
  • Lemon wedges for serving (optional)

How to Prepare

  1. In a large pot, heat olive oil over medium heat. Add diced chicken pieces and cook until they are browned on all sides.
  2. Add chopped onions and minced garlic to the pot. Cook until the onions are translucent and the garlic is fragrant.
  3. Stir in sliced carrots and cook for a few minutes until the vegetables begin to soften.
  4. Pour in the chicken broth, and add dried thyme, salt, and pepper to taste. Bring the soup to a simmer.
  5. Add any small pasta of your choice to the soup and cook until the pasta is cooked.
  6. Let the soup simmer for about 10-15 minutes, allowing the flavors to meld and the vegetables to become tender.
  7. Taste the soup and adjust the seasoning if needed.
  8. Ladle the chicken garlic soup into bowls. Garnish with chopped fresh parsley and serve with lemon wedges on the side if desired.
