2 medium-sized eggplants

2-3 cloves of garlic, minced

1/4 cup tahini (sesame paste)

Juice of 1 lemon

2 tablespoons extra-virgin olive oil, plus more for drizzling

Salt, ground cumin, paprika and fresh parsley, for garnish.

How to Prepare

  1. Wash the eggplants and pat them dry. Prick the eggplants in several places with a fork to prevent them from bursting while roasting. Place the whole eggplants directly on the stove fire. Roast until the skin is charred, and the flesh is soft.
  2. Once the eggplants are done roasting, remove them and let them cool for a few minutes. Cut the eggplants in half lengthwise, and scoop out the flesh into a bowl. Discard the charred skin. Use a fork or potato masher to mash the roasted eggplant flesh, or you can process it in a food processor for a smoother texture.
  3. Add the minced garlic, tahini, lemon juice, and olive oil to the mashed eggplant. Mix everything together until well combined. Season the baba ganoush with salt, cumin, and paprika. Adjust the seasonings to your taste.
  4. Transfer the baba ganoush to a serving dish, and drizzle it with a little extra olive oil.

If desired, garnish with fresh parsley for added flavor and presentation.

Serve your homemade baba ganoush with pita bread, fresh vegetables, or as a dip for your favorite snacks.
