Ingredients

For the Dough

  • 3 cups all-purpose flour
  • 1 cup unsalted butter, melted
  • 1 cup plain yogurt
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

For the Cheese Filling

  • 2 cups feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup fresh parsley, finely chopped
  • 1 egg (for egg wash)
  • Sesame seeds (for garnish, optional)

How to Prepare

  1. In a large mixing bowl, combine the flour, melted butter, yogurt, baking powder, and salt. Mix until you form a soft dough. If the dough is too sticky, you can add a little more flour.
  2. Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth.
  3. Cover the dough with a damp cloth and let it rest for at least 30 minutes.
  4. In a mixing bowl, combine the crumbled feta cheese, shredded mozzarella, and chopped parsley. Mix well.

Assembling and Baking

  • Preheat your oven to 375°F (190°C).
  • Take a small portion of the dough and roll it into a ball. On a floured surface, roll out the ball into a thin circle (about 3 inches in diameter).
  • Place a spoonful of the cheese filling in the center of the dough circle.
  • Fold the dough over the filling to create a half-moon shape, and press the edges to seal. You can use a fork to crimp the edges for a decorative touch.
  • Place the filled Sambousek on a baking sheet lined with parchment paper.
  • Beat an egg and brush it over the top of each Sambousek. This will give them a golden color when baked.
  • Optionally, sprinkle sesame seeds on top.
  • Bake in the preheated oven for 15-20 minutes or until the Sambousek are golden brown.
  • Allow them to cool for a few minutes before serving.
