RECIPE OF THE MONTH: Breads & More Breads

Winter season is all about baking bread. Breads are easy to make and a lot of fun to enjoy hot breads on cold mornings. There is nothing better than the smell of fresh bread in a home. Here are some of our favorite breads for winter baking.

Chocolate Quick Bread

Chocolate Bread

Ingredients

  • 1-3/4 cups all-purpose flour
  • 1/2 cup baking cocoa
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs, room temperature
  • 1 cup buttermilk
  • 1/2 cup miniature semisweet chocolate chips
  • 1/3 cup chopped almonds.

Direction

  1. In a large bowl, combine the flour, cocoa, baking powder, baking soda and salt.
  2. In a separate bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well. Add buttermilk; mix well. Stir into dry ingredients just until moistened. Fold in chocolate chips and almonds.
  3. Pour into a greased 9×5-in. loaf pan. Bake at 350° until a toothpick inserted in the center comes out clean, 55-60 minutes. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

Orange Banana Nut Bread

Ingredients

  • 1-1/2 cups sugar
  • 3 tablespoons cooking oil
  • 2 large eggs, room temperature
  • 3 medium ripe bananas, mashed (about 1-1/4 cups)
  • 3/4 cup orange juice
  • 3 cups all-purpose flour
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts

Direction

  1. Preheat oven to 325°. In a bowl, combine the sugar, oil and eggs; mix well. Stir in bananas and orange juice. Combine the dry ingredients; add to banana mixture, beating just until moistened. Stir in walnuts. Pour into 2 greased 8×4-in. loaf pans.
  2. Bake until a toothpick inserted in the center comes out clean, 50-60 minutes. Cool for 10 minutes; remove from pans to a wire rack to cool completely.
